Whole Grain Banana Chocolate Chip Mini Muffins

These mini muffins are a perfect little treat for kids. They are peanut, tree nut, and sesame free making them safe to pack in the lunch box or for sharing as an after-school snack. They are 100% whole grain and sweetened with banana, applesauce, and maple syrup. You can omit the chocolate chips or replace them with unsweetened dried fruit to eliminate the refined sugar completely.


Makes 24 mini muffins.


Ingredients

  • 1 cup whole spelt flour (or another whole grain flour)

  • 1/2 tsp cinnamon

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup mashed banana (2 large or 3 small)

  • 2 eggs, beaten

  • 1/4 cup avocado oil (or another neutral flavoured oil)

  • 1/4 cup unsweetened applesauce

  • 1/4 cup maple syrup

  • 1 tsp vanilla

  • 1/4 cup dark chocolate chips


Directions

  1. Preheat oven to 350F. Grease mini muffin tin, or line with baking cups.

  2. In a large bowl combine flour, cinnamon, baking soda, baking powder, and salt.

  3. In medium bowl combine banana, eggs, oil, applesauce, maple syrup, vanilla, and chocolate chips.

  4. Add wet ingredients to flour mixture and stir until just combined.

  5. Spoon batter into prepared muffin tin.

  6. Bake for 20 minutes or until a toothpick comes out clean. Allow to cool.
